my p60 is showing less than my normal annual salary. i know this is to do with the pension contributions i have made. However i am retiring soon and my payments will be determined by my p60, is there a way of proving to a pension company my true salary amount?

Yes. You can show them your wage slips, your contract and your bank statements if necessary.
