Thanks to Mumsnet we are now making a 3 weekly meal plan and sticking quite well which is helping us save well, however on weekends and the odd day off we are really struggling with ideas for planning ahead for brunch/lunch type meals. DP eats sandwiches all week at work so is reluctant to have sandwiches or soups really, ends up going to a local drive through for something Hmm

What do you all keep in the house for lunch type meals on a weekend? This seems to be where we are spending all our money recently because we cannot think of things to have.

Kedgeree is very brunch-y, smoked haddock is cheap in Iceland.

If I wasn’t allergic to cows milk I’d do a pasta bake with ham/smoked salmon/tuna in a cheesy sauce.

What sort of food does he buy at the drive through? Could you try to include that in the shopping?

Would he/you eat something like fajitas? Mostly veg with a little meat or chicken? Everything cut to the same size.

Omelette, poached or scrambled eggs on toast. I really enjoy tomatoes on toast, sliced and cooked with oregano then either add grated cheese or bacon, or just add the tomatoes to toast. The same with mushrooms.

Fajhitas is usually a weeknight meal. He will go and grab a kfc or burgers, getting some goujons in is a good shout thankyou. Omelettes too! Great ideas.

Home made sausage rolls? I did this with sausages from the farm shop and a pack of ready made pastry that was yellow stickered to 55p. Went down well. Jacket potatoes, home made wedges with various toppings. Home made burgers. I have been looking at Miguel Barclays Instagram for £1 meals too though haven’t tried a recipe yet. Naan bread pizzas are nice too.
