Stilton cheese

My neighbour has just given me 3 pieces of Stilton cheese. Two are past there sell by date but, I'm sure, will be ok. The other is in date and I will freeze it. What recipe can I make to use this up?

I'm not at all helpful, but am watching with great interest as I have a large lump in the freezer.

Someone suggested brocolli & stilton soup to me, but no-one here fancies that much. I was vaguely considering some sort of blue cheese sauce to go with beef and/or burgers or maybe on a hm pizza, but if anyone has a better idea I am all ears.

It's nice crumbled into a rich beef casserole.

I also put it in mash to serve with steak, or make a sauce just with cream and the Stilton.

Stilton rarebit is lovely too.

I had a blue cheese quiche at my aunty's over Christmas that was delicious! I don't normally like blue cheese but this was amazing...

Pasta with blue cheese and walnuts stirred in is delicious (and a really easy and quick meal).

chicken and stilton pie is great. I just poke bits of it in amongst the chicken and then make a creamy sauce.

Also not bad in caulicheese, although it's easy to use too much.

No one here really likes it much apart from in a pie. And I keep meaning to make a Beef an stilton pie.

Scones?

Chicory, rocket, french dressing and caramelised pecan nuts with Stilton is a great salad.

We always put it inside homemade burgers

I used up some Stilton crumbling it into mashed potato and put some crispy bacon in too, served with some veg. It was an experiment which turned out ok!

Broccoli and Stilton soup

Gosh! Thank you, great ideas. I am going to do a Stilton quiche tomorrow as the boys will eat that (and I got 20 free range eggs for £1 at the local shop tonight) and a cauliflower cheese for the weekend. That should take care of it.

I second broccoli and stilton soup ,it really is delicious, add garlic but not too much stilton or it may be too strong for dcs,also try little cubes on a pizza again not too much.

Fried gnocchi in blue cheese sauce is one of my favourite meals.

Its really lovely souperb, bit of a standby meal in our house as it's so quick. You don't actually need that much cheese or many nuts so it's quite cheap too.

It is lovely stirred in pasta with roast veg too.

Dh said the quiche was the best he has ever tasted and the cauliflower cheese was lush (and did 2 nights). I still have one piece left but it's in date so will use next week.

Mix with a bit of garlic and creme fraiche, put into large flat mushrooms, put into the oven. Gorgeous.
