Best 'no meat night' recipes?

So I've been reading some threads on here as to how to save money and a lot say eat without meat a few nights a week.. Sounds great.. Until I try and come up with anything more than my one meat free dish of aubergine curry with naan bread?! Help?!

Dice some pumpkin/squash and some mushrooms. Put in dish in oven. Cook some gnocchi add to dish. Cook till pumpkin is soft. We throw some spinach in at the end.

We like bean chilli...just like a normal chili but with beans, obviously! I use onions, garlic, a little cumin, chilli, red peppers, a tin of baked beans, a tin of kidney beans, a tin of any other beans (black beans are good) and a tin of chopped tomatoes and some tomato puree. Simmer for 40 minutes or so. Good with rice or wedges but what I really like (and am having tonight) is a tortilla stuffed with the bean chilli, soured cream, guacamole and a little grated cheddar. Big salad on the side too. The chilli is about 250 calories per portion, so quite healthy.

Vegetable chilli with lots of grated carrot, beans, butternut squash, broccoli, tins of toms.

Also roast vegetables are nice, you can posh it up by adding goats cheese and balsamic syrup.

Pasta in pesto, with brocolli and oven roasted tomatoes thrown in to make it a bit different and healthier.

Dice sweet potato, cut red onion and tomatoes into wedges. Drizzle in oil and bake in oven for about 30m. Take out, serve on salad leaves dressed with balsamic vinegar and put some melty-type soft cheese (eggs goat, mozzarella) on top. Mmm.

Beany shepherds pie is nice at this time of year. I just do a beany stew with whatever veg I've got hanging around and top it with mash. It's really good with sweet potato mash.

I made a spicy red lentil soup last night that was lush. Recipe is a Hugh Fearnley-Whittingstall one from the Guardian if you want to search but it's something like this:

Chop an onion and two garlic cloves and fry for five mins with half a teaspoon each of cumin and coriander seeds. Add a litre of veg stock and 300g red lentils. After ten mins add a tin of tomatoes and cook for another 15 mins until lentils are soft. Puree and serve, topping with plain yoghurt with chopped coriander stirred in.

Stir frys are good too, we often have a veg one or just add really minimal amounts of meat.

Soup (lots of squash / pumpkins about at mo)
Broad bean & lemon risotto (really is lovely)
Pasta - macaroni cheese, pesto, gnocchi with tomato sauce (like a bolognese but just leave out minced beef)
Spicy root veg casserole (from bbc good food)
Roasted veg with goats cheese
Baked stuffed peppers (filled with cous cous and halloumi)
Red lentil dhal
Butternut squash & pineapple thai curry (also bbc good food - so good!)

Tonight we had a can of chick peas mixed with a jar of Morrisons curry sauce,which is about thirty pence a jar, on rice. Delicious!

Chachouka is another good one, I use the recipe from H F-W's Veg Everyday but there are loads of recipes about. Actually that book is really good for meat free ideas, there's a squash curry in it that's delicious.

This curry is really yum. Most of the ingredients I used were from Aldi. Super cheap. I also used passata instead of fresh tomatoes.

Veggie pasta bake: homemade tomato sauce packed with any combination of peppers, carrots, sweetcorn, courgettes, frozen soya beans, tinned cannellini beans... Stir plenty of it into pasta. Top with egg-enriched bechamel sauce, then a mixture of grated cheddar and breadcrumbs. (I am yet to meet any normal human being who doesn't love this.)

Lentil Dahl with rice or chapatti and a sliced, hardboiled egg.

Macaroni cheese with tomato salad

Baked potatoes with veggie chilli (see monkey's recipe), or with hummous and roasted veg (any mixture of red onions, courgettes, peppers, carrots, parsnips, butternut squash, fennel...). If you like it spicy, keep a jar of Harissa in the fridge to liven it up. Obviously, baked potatoes with beans and cheese are also brilliant.

Omelette with peas and chunks of boiled potato, served with a green salad and crusty bread.

Veggie casserole with cheesy dumplings.

We do a gnocchi and spicy tomato sauce with fried halloumi.

Also, puff pastry (ready made, obviously!) with cream cheese, fried onions and sliced tomatoes with salad, a fab sweet potato curry, mini naans with boursin or herby philly/own brand cream cheese and roast veg on top.

We are a little but in love with butternut squash risotto right now. Another popular one here is sweetcorn quasiddilas?

Celtic is that book good then? Might see if the library has got it in. We borrowed the innocent cookbook recently and that had some great veggie recipes.

Another veggie meal we often have is falafel with pitta bread and crunchy salad.

Jilted I think it's brilliant, it's given me lots of ideas. Still lots in it I haven't tried.

Delia has a vegetarian moussaka which is absolutely lush. It's a bit of an effort to make but Def. Good enough for a special meal.
