Freezing Jacket Spuds?

I am expecting DC2 in a few weeks and am trying to stock up my freezer with 'ready meals' for those first couple of frazzled weeks.
I bought a sack of baking potatoes yesterday, and am hoping to bake them and then freeze them in a big batch, ready to be reheated and dished up as and when. I'm just not sure this would work?!
Any experience lovely MNers?

I read somewhere that they come out better if you bake them, halve them, scoop out the middle and mix with whatever filling, re-stuff and then freeze. Happy to have a go at this, but what sort of fillings would freeze well?

Stuff jacket potatoes can be frozen but there is little time saved unless you cook them first in the microwave.

To prepare - scrub, prick and cook the potatoes in your usual way, then stuff according to the recipe. Leave to cool.

To freeze - pack in rigid containers. Remove the air, seal, label and freeze,

Storage time - 3 months.

To thaw and serve - thaw at room temp for 2-3 hours then cook straight away in a hot oven at 200oC.400F/Gas mark 6/fan oven 180oC for about 20 minutes or until golden on top and piping hot.

Alternatively, that and reheat in the microwave on medium until hot through, rearranging the potatoes once during heating, then flash under a hot grill to brown the tops.

Thanks ImFab I realise the time element doesnt change much, the idea is that when I have newborn I can tell DH to go to freezer and grab a couple of spuds and stick them in the oven for half an hour and dish up with beans/coleslaw whatever.
No thinking involved Smile

Well they are done, I cooked an oven full of them and stuffed with cheese and bacon, and now they are in the freezer ready and waiting!
