How would I address an email?

I need to send an email to a massage clinic I went to for the first time last week. I am interested in booking another massage but I am unable to book it online because it's a 90 minute massage.

The online details requests for your to please call a number(mobile number to book).

I am have considering maybe whatsapping the number or emailing them. However the email address has a personal name on it (who was the massage therapist I got last week and it was also the business owner).

How would I address an email?

Do I write:
To X (massage clinic name) or

the personal name that is within the email eg - John?
