I'm happy to give out my details in pubs etc but how do the govt know they have the right telephone number?

We moved in March and my old home number no longer exists. I don't even know my new one of by heart yet as it's always my mobile.

How do the track and trace people know who to call.

They don’t. They rely on people being honest.

The only telephone number I have is a PAYG mobile. Unregistered.
But the doctors have it. The school has it. My boss where I volunteer has it. DHs work know it. Friends and family know it. The bike shop I was in yesterday buying a bike knows it.

As for restaurants etc... It's an honesty system. But it's for your benefit as well. I'd rather know I've been in contact.
