@LaChatte you can make crisps with them, or use them in soup (blitz down at the end).

@LaChatte leftover potato skins??? OMG that's the first bit I eat! I would fill them with a veggie chilli, either with beans, mushrooms or sweet potato and then top with cheese and bake in the oven :)

I agree with above - fill it with something tasty and bake again with some cheese to get that lovely, gooey unctuousness.

If you have bread that’s going stale you could make some croutons or breadcrumbs for extra crunchiness and to bulk it out further.

I've just used left over potato skins to make crisps as someone suggested up-thread. They are seriously lush - much nicer than shop bought crisps. I'll never throw potato skins out again.

PS the birds on my garden look pretty fed up. All the left overs are being used up now instead of being thrown out for them!

We had jacket potatoes yesterday. Half a one was left. I just scooped it out and added frozen peppers and a diced rasher of bacon to make a frittata for the dcs. I don't eat meat so I added grated cheese to the potato shell and grilled it then had it with about 3 tablespoons of leftover ratatouille to which I added a few chilli flakes. It was really tasty and the dcs enjoyed theirs too.

I made the crispy potato skins for DS today and he ate them all.

I also attempted a Spanish omelette which turned out to be more of an 'almost frittata', but it was edible and I'll eat the remainder for supper.

Dd has already discovered frozen grapes as a snack, so that was useful.

I've made banana bread for the first time in ages as some were turning. It included an old banana from the previous week that I'd mushed and frozen for this purpose.

We had tuna melts for lunch today, to use the other half of the tin of corn we opened for pizza on Friday. There was a veggie pizza, and the second base was half ham and mushroom, half 4 cheese, to use up bits of things.

Last nights' dinner had slowly fried mushrooms with some garlic and thyme - I couldn't let DH see them before cooking as they were a week old but he loved them.

And I made crab cakes using frozen crab, leftover mash and leftover bread made into crumbs another night.

I save the main stalk of the broccoli (the kids will only eat the florets, and it is one of their fave veggies) for soup - used cauliflower leaves the other day to make up the rest, with Stilton

Made soup this morning, put the whole of the broccoli in including the stalk, putting it in soup is only way I can eat broccoli, and it pureed along with everything else.

The soup is really good, don't know if the broccoli stalk had anything to do with that, but I'll never throw that bit away again.

I've just pooped the broccoli stalk back in the fridge instead of the bin. I have some sad looking spinach so will attempt a spicy green soup in the soup maker tomorrow.

It's a good point.

Even in normal times (I remember when it was all fields round here etc), I use half milk/half water as I think it makes for a lighter result than all milk.

Grated carrot with a few peanuts and sultanas thrown in makes a lovely salad.

One of my dogs loves the broccoli stalk and the others eat carrot and apple peelings. I don't have much waste here because of them.

DS never eats crusts so I've started putting them in a bag in the freezer, then when I have enough I whizz them up in the food processor and use for crumble topping (mix breadcrumbs and sugar, scatter over fruit, pour melted butter on top and bake). Which reminds me, I was going to do that tonight!
