What random stuff are you doing to avoid wasting food?

Today I am braising a lettuce. An out of date romaine lettuce.

DP is WFH and instead of making himself a lunch like a sandwich or salad he’s having random defrosted casserole/stew leftovers from the freezer. I think he’s had the same lunch for the last few days Grin

I discovered a jar of sun dried tomatoes in herby oil hiding behind the never used bag of sugar. I decided NOT to look at the date on them...
Blitzed them with a handful of peanuts , loosened with a bit of the oil. Spread on toasted stale bread with a bit of basil from my growing pot on windowsill.
Absolutely delicious as a snack. Yesterday DH and I had a big plate of these instead of an evening meal

Well, because they were relatively long dated in M&S, I have a packet of cooked mussels to use this week. My plan is to do a seafood pasta tomorrow night with some monkfish and salmon (dash white wine and some cream for sauce) from the freezer, and then use the majority of those latter 2 fish for a Thai fish curry the following night.

Bruce I did similar with the final handful of wild garlic leaves (bought before lockdown) with pine nuts, olive oil and some grated Parmesan and cheddar - I put it out as a dip with pizza on Friday night, but it was too garlicky so will be tossed onto hot pasta instead as it was delicious - just not for eating raw.

One of my aims at the moment is to use up some of the lovely but random things we have, both fresh and longer term stored, that were bought as lovely ingredients but we haven’t hD time to use them.

Ooh I have a few su dried tomatoes left in a jar, Bruce, I might try that tomorrow. I've also saved some broccoli stalks today to make soup.
My buttercream-based cookies were a partial success. They are somewhere between a cookie and a cake. They could really do with more sugar but the dcs liked them so they can eat the rest.

Nettle soup had it for the last 3 days - and discovered that if you add lots of black pepper and parmesan it is extremely tasty

Constantly googling to see whether I can freeze veg. I froze some chopped up celery that was past its best. Now it's being chucked into bolognese to bulk it up a bit. Green beans, ends chopped up straight in the freezer 😊

Just used some slightly past their best potatoes, carrots and celery to make a soup. Added some dried peas, lentils and barley plus some fresher greens. We are having chicken for dinner and will chuck a bit in as well. Comfort food like my granny used to make.

Those peelings crisps are delicious!

We did ours with olive oil, salt and black pepper. To think that we just used to pop them in food waste.

@SnugglySnerd our local milkman is so busy they aren't even accepting new customers!! A shame as it would be really handy, I know they do veg and eggs too!

I have loads of crusts to use up... probably another bread pudding for us Grin

I had a bag of salad that was turning. I sort of stir-fried it with mayflower sauce and noodles. Lovely.

Also making soup from celery tops, potato peelings and cucumber on the turn. It was ok once I'd chucked a load of garlic and curry powder in.
