Lockdown recipes

We have been in isolation for what seems like forever, so have been making meals with what we've had in the house, along with whatever kind friends and family have dropped off.

Next week, I get to go to the supermarket, and am scared of the world out there. I'm not sure what the supermarket is going to be like, so would like to meal plan for the next week.

My kids are both autistic, so have differing food preferences from each other - though they have both been amazing lately with knowing they can't get all their favourite things.
I am disabled, so am often limited to the amount of time I can spend standing in the kitchen preparing food.

Keeping in mind what is/isn't likely to be available, what are your recommendations for easy family meals that I should be able to cater for? Is there much in the way of 'freezer foods' (e.g. goujons, veggie fingers etc) that I'll be able to keep as a back up for the days that cooking is beyond me?

If there's already a thread like this, please let me know.

mince-in-the-hole: brown the mince in a pan (can use quorn or regular mince). using a cupcake tray, put mince into each hole in the tray, and then pour the batter ( to make: Tip 140g plain flour into a bowl with ½ tsp salt, make a well in the middle and crack 2 eggs into it. Use an electric whisk to mix it together, then slowly add 175ml semi-skimmed milk, whisking all the time) over the mince and bake at 220 degrees c for around 45 mins. can also be done with chopped sausages (make sure to cook the sausages before baking)

That mince-in-the-hole sounds like it could be something they might eat! Neither are really fond of fish, but even those fish fingers look great, so might be able to get them on board.
