Mine was always at 10pm, I e never actually asked why it has to be late at night. I presume it's to give you maximum waking hours for shagging or summat

I think it's because they do the collection 36 hours later, thus they can do EC in the daytime. If you get to self-fertilise (as it were), I'm not sure why it matters, though - probably just a hangover from the IVF way of doing things.
