how do I know when I have some?!

If you are willing, have a gentle feel around. If you get it between your fingers, it'll stretch, a good couple of centimeters.
I find it helpful to wear black knickers. I'm sure that unfertile cm leaves a patch the look like lines, whereas fertile cm is round.
I'd highly recommend Taking Charge of your Fertility by Toni Weschler. It's a really informative book. Not too expensive on Amazon.

What if I never see any? Can I get preg without it?

You can. I know someone on here who never has it and she's about to give birth! You can try doing pelvic floor exercises for a couple of minutes before you check....

I've mentioned elsewhere here but I have been taking vitamin b complex and manuka honey every day this cycle and I have had loads of of EWCM. I'm not saying that this has helped but it's noticeably more.

Others suggest evening primrose oil too but only until you ovulate...it can affect implantation. It depends on how aware you are of ovulation, if you are charting for example, it's fine. Be wary if you're not certain when ovulation occurs.

I've started on the grapefruit juice today but it's CD 13 so may be a bit too late this cycle.

I saked a couple of the consultants at my hospital about this, and apparently, some people just do not notice EWCM, they just get more of a "watery" type mucus while fertile.

I asked as I have never had it, but did get pregnant (had mc's though :().

Still waiting for that BFP that will stay the course, apparently now I am on Metformin, for me it will decrease the risk of miscarriage to that of a "normal" woman. Hmm

I became OBSESSED with trying to find EWCM when I was ttc this time round. It used to depress me that I never found any. EVER. Then I chilled out about it and fell pregnant that month. Seems you don't need to have EWCm to fall pg. Good luck x

*asked obv! although I would like to sack them sometimes.
