Things I can make tonight - pavlova? stuffing?

Can I make up the stuffing in a tin tonight and keep it in the fridge?

And make a pavlova and keep in airtight box (not adding cream til Christmas Day)?

yes, make pavlova tonight and prep stuffing.

Could also prep veggies, if you were so inclined. Peel spuds, sprouts, carrots etc and keep in water in tupperware boxes in fridge (or even outside if it is cold and snowy where you are).

I also make sprouts with pancetta with Christmas lunch. So I will chop and fry shallots, pancetta and chestnuts tonight and put in fridge ready to mix with cooked sprouts on Christmas day, warm through in pan and serve.

Yep, should do. Just don't cut them too thinly - ie chunky rather than spindly "julienne" stylie :-)
