turkey use by date is 26th, can we eat it later ?

Ive ordered a turkey to be picked up from Waitrose tomorrow, on the order form it says the use by date is the 26th. I think this is a bit rubbish really, I would have liked to use the leftovers for a bit longer. Do you think it will be ok on the 27th if I cook it on Christmas day then keep it in the fridge ?

As long as you cook it by 26th it will be fine for left overs for a couple of days.

Use by means cook by, once cooked it is fine to keep for several days to use the left overs (or freeze some for even later use).
