Not Beds/Bucks, but I grew up in Bedford and we always went on the Santa specials at Nene Valley Railway nr Peterborough here. Took DS1 a couple of years ago too. Under an hour from Bedford. You visit Santa in his shed, kids get a present then go on a decent length train ride through pretty countryside.

Leighton Buzzard Railway do something too.

If you're easy driving distance to Stevenage or Peterborough you could hop on a fast train to the National Railway Museum at Y0rk. 1.5 hours from Stevenage. We've done it a couple of times with the dcs (not specifically a Christmas thing though) and it is very popular.

Think there is a place near Aylesbury too which has Thomas-themed trains and does Santa days...
