Best Lamb recipe

I know it is really early to be thinking about this but one thing I am is organised! I will be doing turkey with all the traditional trimmings on the day itself but for Boxing Day I want to do a roast lamb with dauphinoise and maybe red cabbage. I would like to "posh up" my lamb a bit - I have had it studded with garlic before which was fabulous - does anyone have any tried and tested recipes??

My Mum has a fabulous recipe. You need to get your butcher to butterfly the leg for you. Then you basically smear the inside with butter and then press loads of fresh herbs into the butter - she uses rosemary (take it off it's stalks),mint and parsley. Over that you lay some Parma ham or similar and then roll the leg back up and secure with string.

Roast as you normally would, and you end up with amazing soft lamb, with a little ham and herb stuffing through it.

Yum.
