I have just ordered my pudding bowls from Lakeland so all I need is a traditonal yummy recipe and I will be able to make my first ever christmas pudding - yay!

I use my dad's variation of Mrs Beetons christmas pud - the fruit soaks in Amaretto liquor for 10 days. mmmmmmm

I get 2 or 3 medium sized puddings out of it.

Papa?s Christmas pudding
8 oz chopped suet
8 oz breadcrumbs
2 oz of plain flour
8 oz raisins
8 oz sultanas
4 oz currants
4 oz candied peel - Cut your own or use ready cut
half a grated nutmeg
half an ounce of mixed spice
half an ounce of ground cinnamon
1 gill of milk (about a quarter pint of milk)
1 wineglassful of AMARETTO (optional)
2 oz desiccated coconut or shredded almonds
Rind of 1 lemon plus juice
4 eggs
pinch of salt

Cover dried fruit in amaretto and leave to soak in a covered bowl for 10 days.
Finely shred the mixed peel; peel and chop the lemon rind.
Put all the dry ingredients (including drained soaked fruit) in a basin and mix well Add the milk, stir in the eggs one at a time, add the amaretto and the strained juice of a lemon.
Work the whole thoroughly for some minutes, so that the ingredients are all well blended.
Put the mixture in a well greased or floured pudding cloth.
Boil the plum pudding for 4 hours or steam for at least 5 hours. Sufficient for 8 or 9 persons

It is delicious and we have last years sitting waiting for us - I pour a little amaretto onto the puds post steaming and leave them to mature for 4-6 week before eating. Althoug the longer you can leave them the better.

it should say covered bowl in the fridge - or the ferment!

I madethis Rachel Allen recipe last year (from Delicious magazine) and it was fabulous - even if I say so myself! I don't usually eat Christmas pud as I don't like the heaviness, but this was lovely, and got compliments from all that tried it .

Steaming depends on the pudding size - about an hourand a half for a meduim one. Dad is a heathen and microwaves his for 5 mins

at microwaving it after al that effort with making it!
