Help - M&S/Annabel Karmel Kids' Baking Set - Muffin recipe

DD got this M&S gift set for Christmas and DH "recycled" the box in a burst of post Xmas tidying. We now have choc chips and muffin mix and don't know what to add to make it up. M&S are sold out and can't help. Does anyone know what I need to add? DD is desperate to make them. Failing this - anyone have a good recipe and we'll make some from scratch. Thanks!

we made this on monday. I've thrown away the packaging though sorry! It was one egg, some veg oil and some milk, but I can't remember the quantities - really sorry. (I think it was 50ml of oil and 40ml of milk).

MaHumbug, it came with muffin tins, spatula and a whisk, in a big white box, I think. There were recipe cards inside for some other muffins, but the instructions for the muffin mix were on the box. It would be great if you have the quantities.

Monster cup cakes - she says they're a cross between brownie, muffin and cup cake

85g 3oz chopped dark choc
85g 3 oz Butter - cut into 2 cm cubes
100g 3.5oz soft light brown sugar
1 egg & 1 egg yolk - room temp
.5 tsp vanilla extract
1tbsp soured cream
75g 2.5oz self-raising flour
1 tbsp cocoa powder
pinch salt
50g 1.75oz milk choc - finely chopped or choc chips

Icing

55g 2oz plain choc
55g 2oz unsalted butter
.5 tbsp milk
50g 1.75oz sieved icing sugar

180 c 350 f or gas 4

melt choc butter and sugar, stirring frequently

Whisk eggs vanilla and soured cream - stir this into the cooled choc mix

Sift over flour cocoa powder and salt then fold in along with milk choc

bake for approx 20 mins then leave to cool

125 softened butter
125g caster sugar
2 large eggs
1 tsp vanilla extract.

pollyanna's figures are correct - we made them yesterday! also add half the choc to batter and then add rest to top of each muffin once spooned into tin.

oh and find another whisk - found the one in box flimsy
