Mix flour with icing sugar, grate in some really cold butter and a bit of orange zest. Add an egg yolk, mix well and squeeze together, wrap in cling-film and chill in the fridge for about 20 minutes.
roll out between two pieces of baking paper. Line the tins and fill with mince meat, cover with more pastry and bake for about 20 mins at about 180.

what sort of pastry are you after? Bog-standard shortcrust is half fat to flour, and if you have pastry/baking marg or lard to combine to make up the 'fats' weight then it seems to come out nicely. Crumble them together til like fine breadcrumbs, add tiny amount of very cold water, press/squeeze together and then when it looks like pastry should you roll it out.

If you're after puff pastry (tho i dunno why you'd want to for mince pies) then it's a chef you need

i use nigella
240g plain flour
60g butter
60g trex
jusice of an orange

make bread crumbs in a whizzer.... whixx in juice from orange ntil nearly a ball then make a ball

keep it all cold

chill pastry for 20 mins...
add mince

roll out thin and bake GM6 for 10 mins

re liquid i have used cider and apple and mango juice this week (pies were more popular than i'd feared had to make more!). have to be careful with juice things though or pastry will be tough. i always put it in fridge for half an hour before rolling.

i made 12 normal and 12 small with 120g butter / 240g flour.
