This Christmas is really important as its mine DPs and DS first as a family living together. There will be 9 people in total only child is DS.

DP is muslim so everything we eat has to be halal. Thanks to fabulous mumsnetters I sourced a duck and turkey but couldn't find goose fat anywhere. My idea is to cook the duck the day before and save the fat for the roasties and save the meat for the evening -buffet duck pancakes. Will the meat keep ok for the next evening? Will one large duck be enough for small canapies for 9 so that everyone at least get a taste or should I buy 2? If I glaze the duck will it spoil the flavour of the fat for the roasties?

Also how far in advance can I make batter for yorkshires?

batter can be made the day before and kept in fridge.

I don't know about duck but hope all goes well.
