Never had or cooked a goose before!!! Yes, I must me mad!!!

Is it good?

What should I be careful of whilst cooking?

What does it go with?

etc, etc, etc

Any helps and tips very gratefully received.

Produces a lot of fat so need to drain it regularly, but keep the fat for future roast poatoes

If you google good food website they should have some goose recipes and accompaniments.
