Is Stollen very hard to make? Anyone got a good (easy) recipe?

It's a bread rather than a cake, so it looks a bit hard. There was a recipe in the guardian on the weekend, I'll see if I can find it for you.

If you're up for cheating, Lidl do a fabulous one. Buy it, put it on a nice cake stand, dust it with icing sugar a la nigella and nobody will ever know!

wish I'd done that instead of making the 5 bloody Christmas cakes that I now have to ice despite being poorly with this fecking flu bug!!!!

I cant really cheat this time.. I'm doing a few homemade bits to take to MIL's for Christmas.
She's said not to bring anything so its the effort that I'm putting into doin a few bits for her that she'll appreciate hopefully rather than the actual 'stuff'!

Stollen ring (last yrs Good Housekeeping)

Preheat oven to Gas 7/220c/200c(fan)

Soak 2oz dried cranberries, 2oz raisins and 1oz mixed peel in 1 tblsp brandy.

Roll out a pack of bought puff pastry, scatter with fruit and 2oz pistachio nuts, roll 8oz marzipan into a log and place down the middle then roll up to form a log.

Cut into 12 slices and arrange them overlapping slightly in circle on baking tray.

Bake for 15-20 mins, then glaze with mixture of 4tblsp warmed apricot jam and 1 tblsp brandy.
