HELP! Recipe inspiration for 10-12 (mums) dinner party!

I thought it would be nice to host a dinner party for some girlie friends before Christmas, children and family take all our undivided attention over the festive season! I'm struggling to come up with veggie menu (3 course) which isn't hellishly complicated and doesn't rely too heavily on timing! PLEASE HELP!!!!!

stuffed potabello mushrooms
(fry chopped mushroom stem+chopped onion add spinach and grated cheese = bake 10mn)
Serve on bed of mixed leaves with olive oil/balsamic vinegar

Tagiatelle with grilled green aspargus/ single cream/ lemon rind and juice/pepper and shaved pamesan cheese

vegetarian moussaka (replace mince meat with mushrooms) and layer with aubergine/tomato & mushroom sauce + cheese sauce. Use a bit of pesto sauce to brush aubergine slices.

prepare mushrooms and bake last minute

same for moussaka (bake 1 hour)

pasta can be cooked (AL DENTE!!!), drained, rinsed in cold water then add a dash of olive oil to prevent sticking.
prepare sauce ingredients and assemble last minute. Toss in pasta to heat through & sprinkle lots of parmesan on top.
