Has anybody got an easy fruit cake recipe?

Last year, when I was pregnant and extremely paranoid about eating or drinking the wrong things, I made my christmas cake with apple juice in place of brandy and it was just as good. Well, perhaps I do prefer the booze but as a fruit cake it was perfectly fine.

I use the Rosemary Conley recipe - let me know if you want that. It is quite easy - the most time-consuming bit is grating some cooking apple.

Here goes:

LOW FAT CHRISTMAS CAKE225g no pre-soak prunes115g grated cooking apple175g dark muscavado sugar4 eggs, beatenzest of 1 lemon and 1 orange175g SR flour1 tbsp mixed spice50g sunflower seeds225g each of currants, sultanans and raisins115g glace cherries120ml brandy 2 tabspn apricot jam, to glaze
Pre-heat ovento 170c/325f gas 3_Line a 20cm cake tin._Mix together prunes and apple. Add sugar then beat in eggs a little at a time. Press down to squash the prunes._Mix in lemon and orange rind then carefuly fold in flour, spice, sunflower seeds and fruit._Gradually stir in brandy._Pour in tin._Using back of spoon. make a slight dip in the centre to allow even top once baked. Bake for 2-2 1/2 hours or until cooked. Cool on wire rack. Remove parchment paper and brush with warm apricot jam.
