My House stinks of ........CHRISTMAS CHUTNEY

I made my Christmas chutney today and now my whole house stinks of vinegar.

I'm being good this year and cutting down on the amount we spend on prezzies at christmas. I'm making family and friends a jar of chutney, a bag of gingerbread and a bag of truffles.

The DC's came into the kitchen with very scared looks on their faces as they thought the bubbling, stinking goo on the hob was their tea!!!

Ooh, recipe, please!

Ok, Reciepie is:

This makes 4.5lbs

1lb Plumbs stonned and chopped
1lb Onions chopped
1lb Pears peeled and chopped
8oz Cooking apples peeled and chopped
8oz Celery chopped
1lb Tomatoes skinned and chopped
4oz Raisins
2tsp ground ginger
1lb Granulated sugar
850ml Cider vinegar

2tbsp pickling spice in a muslin square.

Chop all the fruit and veg and place in a very large pan with HALF of the vinegar. Add the ginger and the muslin with the spice in. Bring to the boil then turn it down and simmer on a very low heat for 2hrs.
Then add the sugar and the rest of the vinegar and bring back to the boil. Boil until the chutney goes thick.

When cool, spoon into sterilized jars, place a wax paper disc on top and screw on the lid.

This chutney is best made a month or so before its needed but needs to be eaten within a week of opening.

It does stink the house out while you are cooking it but worth it in the end.

Ooooh forgot to say, take out the muslin square before putting it into jars but I'm sure you guessed that anyway.

Thanks for that. Roughly how many normal-sized jars would 4.5 lbs be?

lucysmam · 19/10/2008 21:00

If it helps, I think a normal shop bought jam jar is about 1lb, so 4 and a half shop bought jars iykwim

Perfect, thank you.
