Tried & Tested Gluten Free Christmas Cake

My Mum always made Christmas cakes in the run up, one for her and one for my Nan. I lost her last year, and my Dad this year, so I'd like to try and carry on the tradition and make one for us, and one for my ever so lovely neighbours.

I've never made one before, and I'm celiac and my neighbour is gluten sensitive so I'm hoping someone has a brilliant, tried and tested and super successful GF cake recipe they could share please to help me keep bit of my Mum's Christmas spirit going.

can you make mums receipe and just use GF flour? Or check out Becky Excell books / online content as good recipes.

So little flour is used in traditional Christmas cake recipes you can substitute a wheat free flour like Doves in any recipe. I particularly rate Mary Berry’s Christmas cake. It stays moist if you feed it well!

I use Mary Berry’s recipe and just swap out the flour. It doesn’t need to rise really, it’s not like a Victoria sponge where the texture might be off. It’s always worked fine for me.

Thank you for replying.

I had looked at a couple of normal recipes and noticed how there wasn't much flour and wondered if it would be ok just substituted 1:1. I'll have a look at Mary Berry then, unless I can find the recipe Mum would've used, I can't imagine there's a huge variation between them all.

You can sub gf self raising flour in plus ground almonds to help with texture

Here's a screen shot from the link I shared before showing a possible sub. You may not need the xanthan gum if your gluten free flour has some or because as @MellowSubmarine says, you're not making victoris sponge or sv9brs that need to be light and fluffy.
