Ideas for an easy freezable Boxing Day meal instead of Christmas dinner

Boxing Day!
I always host Boxing Day and I’m finding doing a Christmas dinner on Boxing Day difficult as we also do Christmas Day with the other half of the family.

Has anyone got any ideas of what I could make that’s simple and easy and preferably freezable? I’m thinking of making something before and saving all the time in the kitchen.
all I can think of is lasagna and garlic bread!

Big chilli.

Fish pie mix then top with filo pastry to cook on the day.

Venison casserole can be frozen. Mary berry has a good venison pie with the recipe.

Have a look for ideas at Cook! Cook! meals are lovely, although very expensive imo, but you might see something to inspire you to make your own.

My current favourite no hassle meal is salmon en croute from Aldi. Really good value, tasty and cooks in about an hour. Find in the freezer section.

We are a cook from scratch kind of family but it's not worth it when this is available.

Otherwise I'd say chilli, Bolognese or any kind of casserole

We also host on boxing day and I usually do a curry with all the left over meat.

Don’t overthink it. Everyone LOVES lasagne. Lasagne, some salad, a slice of garlic bread, and a glass of red wine is absolute perfection and would definitely be amongst my top 3 meals.

Coq au vin. I found a recipe in a freezer cookbook from the 1980’s. It never lets me down.

We eat leftovers on Boxing Day but when we do a family get together for 15 of us we do curries. Can make a korma for kids and something hotter for adults. Can be made in advance. Add loads of Indian snacks and naan etc.

lasagne is a nice dinner or cottage pie, currey or chilli. I think mince freezes the best tbh.
Im all for making christmas easier.

I think go for the lasagne! You could always get a fancy dessert or a cheeseboard to make it more "special" but honestly think lasagne is a good boxing day meal!

If you have a slow cooker pulled pork freezes lovely . Have rolls and coleslaw . Or spinach and ricotta cannelloni . Meatballs and spaghetti with pasta sauce

Lasagne - I like to make two and freeze one . Especially if I use the dry pasta sheets , it gives them a chance to soften. Also leave it to stand for 15 minutes after it is cooked to firm up , less of a sloppy mess . I put it in the top oven , keeps it warm without overcooking .

Chilli

The sides are the nice bits that make the dish.
Garlic bread and salad with lasagne
Potato wedges, sour cream, cheese , salad with the chilli . Rice with flavouring added -onions, mushrooms .

We make a pizza (DS insists it is a Tradition) I do the dough in the morning and its ready to shape and bake for dinner .
Soup - vegetable /carrot and coriander/ chilli tomato

I'm not a fan of curry .

Not only is this true but it's a lovely contrast to the traditional Christmas fare.

Lasagne but make it a really special one. Nigella's Lasagne of love is a great recipe, or you could do it with a proper ragu

My specialty dish is lasagna so I'd make that but my other suggestion would be a Sausage casserole - I like classic delia braised sausages in red wine, or the hairy bikers diet one bulked out with beans.

Mash or nice bread (latter might be hard to get on Box Day though).

Do you have a slow cooker? I’d get up early and put on a chilli. Serve it with baked potatoes (chuck in the oven and forget about them). I’d also serve garlic bread, nachos, guacamole, sour cream and nacho cheese to go with it - all easy enough to put out on the table for people to help themselves. Get some bags of ready made salad on Christmas Eve for veg.

i always do ham egg and chips. Bubble and squeak of there are leftovers from the day before.

Agree with this, i wouldn't dismiss the lasange

Or get a couple if big butcher pies, chuck in the oven from frozen and do mash and veg

Nothing wrong with a homemade lasagne, this is my kids favourite and what they want me to cook when they visit now they're all adults! Also, a good beef in guinness casserole is delicious and freezes well - serve with some cheesy mash with spring onions and a green vegetable like broccoli or French beans on the side!

I just put the leftover Turkey in a curry jar, boil a bag of rice and heat up a naan. Done.
