Half the roast beef left, any meal suggestions for it?

I'm the only sandwich person in house and I couldn't finish it myself.

Topside. About 1.5kg left.

Most obvious is a kind of stroganoff, then some rough version of a Chinese beef and broccoli or crispy chilli noodle thing.
Massaman curry?

I'm deliberately trying to think of meals as far away from a roast dinner, meat and two veg style of meal as possible.

I usually slice up what is left and freeze it. Then bring out a few slices and warm up in plenty of gravy in the oven and serve with roasties, yorkshire puddings etc. Very easy and not much effort needed.

Literally the only acceptable answer here is cold roast beef thinly sliced with lovely baked potatoes and a fresh green salad. Better than the original roast beef with trimmings imo

Casserole- fry onions off, chop carrots, maybe add mushrooms, sliced/chopped beef, left over gravy plus more, season, lid on couple hrs in oven, serve with creamy mash and veg

Thinly sliced and added to a Goldfish paste curry sauce. Tastes exactly like a Chinese beef curry. Throw some big onion slices and frozen peas in five minutes before eating.
You can buy the paste in all supermarkets and on Amazon for about £4 and it never goes off.

I made birria burritos with mexican rice. Was very nice.

Still loads left.

Think i will do the baked spuds and thin slices then freeze the rest in cubes for a stew

We used to live near a lovely Italian deli and the owner once recommended thinly slicing cooked beef and serving it over a rocket salad with a sprinkle of balsamic and some parmesan shavings. It's a gorgeous combo.

Cut it into cubes and make pasties with carrots, parsnips and some gravy to keep it moist.

I slice it and put it in gravy and heat it up in the gravy. I think the liquid means it freezes better. But either way, it’s nice to have a low effort midweek roast handy in the freezer. If it’s cold like today, something like that would be perfect on a lunchtime sandwich

Onions, potatoes, left over gravy. Traditionally served with beetroot and oatcakes, with a glass of milk, but those are very much optional,in our house.

I make a few pies with leftover Christmas meats, mainly because an easy meal when I am back at work wins. So leftover meat, leftover gravy and lots of veg with a pie pastry lid (or mashed potato or thinly slices potato)....
