I usually do Jamie’s but I cba with chicken wings this year. Do you reckon it would work with wings from the turkey plus giblets and that extra skin around the cavity? Why doesn’t he use giblets?

I will adhere to rest of recipe otherwise. Would this work?

I usually make gravy from the giblets, it works really well. I’m guessing he uses chicken wings because he wanted a make ahead recipe and the giblets wont be available in advance.

I also make from the giblets, plus the neck (check cavities at both ends as I did once cook it with the neck in thinking it wasn’t there).
I add carrot, leek, onion, bouquet garni.

Giblets. Make stock which just for me means simmering them with an onion, carrot and any random herbs i can fine.
when turkey is resting, skim off fat and keep the bit left in the pan. Table spoon heaped of cornflour mixed in a glass (cornflour first) with the stock. Pour in pan, bubble, stir, whack in wine, bubble, stir, whack in veg water ti slacken it, taste, salt. Done.
