What’s your best recipe for Christmas ham in the slow cooker?

I usually cook a 4kg ham in the slow cooker in full fat coke, with onion, carrots, bay leaves and cloves.

Im keen to try something different this year :)

Nigella's cherry coke gammon

Ham in Cherry Cola
2kg mild cure gammon
6 cans cherry Coke
1 onion
16 whole cloves
3-4 tablespoons cherry jam
1 teaspoon pimenton dulce or smoked paprika
1/2 tea spoon red wine vinegar
Method Put the ham and onion in appropriate size pan, add the coke (less the 2 tblsp) boil, then simmer for about 2 1/2 hours - I do slow cooker
Near end of this time, put oven on at gas 7/210 C
Keep the cooking liquid* but transfer ham to roasting dish
Remove skin, leaving thin layer of fat

  • then stud the ham with the cloves, put the jam, paprika and vinegar into a pan and bring to boil, stirring throughout. When thick and syrupy, pour over ham and bake for about 15 mins *the remaining cooking liquid is too sweet for soup (says Nigella) but great for cooking red cabbage in

I do Nigella coke but normal coke - it needs to be full fat not zero.

Cover in cider, bog standard stuff from the supermarket is fine. Add sliced leeks, onions, carrots and potatoes. Season with bay leaves, whole peppercorns and juniper berries.

The bae stock is great as a soup with added lentils and the blitzed into a smooth soup.if its too runny add more potatoes.

Some lovely ideas on here but do you soak your gammon first & throw the soaking water away? I did boiled gammon once without soaking & it was horrendously salty & inedible. Ditto roast gammon. I rescued both by soaking & dicarding the liquid. Think I had to boil the roast gammon too & discard that liquid as well.

My mum always soaked any gammon joint in a pan of water overnight and then drained it - I can't break the habit 😊

Me too, a nice big piece of gammon, baked, with a 😋glaze added for the last 20 minutes, after I’ve stripped off the skin and scored the fat into diamonds. Largely marmalade but with allspice added - smells amazing while it’s cooking.

Myself, I like to use the stock to make soup so for me its just water, onion, apple, celery tops, carrot peppercorns and one star anise - they pick a punch

That leaves a Christmassy stock that I then add lentils too and the gammon trimmings - all the bits that drop off, the bits that dont go through the slicer etc. I cook the lentils in the stock , throw in the gammon cooking veg - liquidise and add the ham
