Vegan Boxing Day food

Recommendations please or ideas for vegan Boxing Day options.

Doing Xhriatmas day leftovers and picky bits for Boxing Day, my brothers girlfriend is joining us for Boxing Day (but not Xmas day) she’s vegan. I’ve got roast potatoes so far that will do both groups 😂

Happy to buy ready done things but I’m a good cook and can make most things, I just need ideas. If you’re vegan what would you like to see on Boxing Day?

fir Christmas Day we are doing honey roast parsnips, potato and sweet potato mash, cauliflower cheese with vegan cheese and almond milk, and stir fried Brussels sprouts with chestnuts, as well as a filo pie with roast butternut squash and spiced chickpeas from Hugh fearnley whittingstall’s book.

We always have a boxing day ploughmans type affair (with gammon/turket leftovers for the meat eaters).
Lots of fancy crackers, vegan pate, balsamic and oil for bread, vegan tart or quiche.
If in laws had bigger appetites I'd probably start with some soup in hollowed out bread rolls but nobody is ever that hungry on boxing day! Everyone is much more interested in getting into a board game and snacking.

I made this last year for Boxing Day. I have two vegetarians and a dairy allergy. It was very tasty and the meat eaters ate it too, alongside a big ham and potato gratin and left over roasties and some other bits from the day before. It's a reasonable amount of effort though, some I wouldn't do it if you're making multiple things. Vegetarian Nut Wellington Recipe | Vegetarian Christmas Main. On Xmas day itself the veggies just have all the vegetables including a vegetarian stuffing and gravy, so I'm happy to make a veggie main for Boxing Day.

Your list sounds lovely, but just a warning, honey isn’t vegan. You might want to check your son is happy to eat it.

Ooh some lovely I'm nut okay garlic ricotta cheese and crackers! Perfect with a left over roastie! I'd do a red cabbage salad and some sort of tart like a puff pastry tomato tarte tatin

Whatever you do, make sure it's not too different from what everyone else is having or there is a spread and people are also welcome to eat the vegan options etc so she doesn't feel like she stands out. Nothing worse than everyone else eating a roast and the only vegan having a bowl of pasta or something
