Gammon in the slow cooker- do I leave the red netting on?

I cook this once a year and have the same dilemma once a year! Not a big meat cooker/eater but everyone loves the Xmas ham and I do love the smell of it.
It's come plastic wrapped from the butcher, then under the plastic is the red string stuff - do I cut that off when I cook it? Please help an idiot not to poison her family this Xmas!

Yes cut the red string off. Mine is being cooked in apple juice tomorrow and then studded with cloves and then glazed with honey, mustard and brown sugar.
