Hi, just looking for a bit of help. Did this recipe :-

but the sugar mix is not brittle. Is there anything I can do to save this? Thanks.

maybe put a few in air fryer or oven for a bit see if it works? complete guess though!

I think she's put the wrong quantity of water in the recipe, there's no way that she added 480ml in that video. Maybe 250 tops.

Basically you'd need to cook them for longer to cook off more of the water from the caramel. You can boil it for longer, or spread them out on baking parchment and slowly bake them to dry them out a bit.

Thanks, I do think the quantity of water was wrong - in hindsite lol! I will try the air fryer with a few - see how that goes.
