Very quick, simple and Christmassy dessert, suitable for vegan/GF/non dairy

Delia’s Christmas Dried Fruit Compote

4 oz/110 g each of no soak dried apricots, no soak dried figs, halved, and no soak prunes.
Same weight of raisins
2 oranges
10 fl oz /275 ml cold water
12 fl oz /350 ml tawny port (personally I leave this out, it’s v nice without).

To serve, 2 oz/50g sliced almonds, lightly toasted (I don’t bother with these either)

Rinse the apricots, figs and prunes under cold water, put in saucepan. Scrub one of the oranges, slice into very thin rounds, cut each round into 4, add with raisins to the pan, add cold water, simmer, covered, for 15 minutes.
Meanwhile, squeeze the juice from the other orange and when the fruit is cooked, stir in the juice and the port (if using).
Leave to cool, and chill in the fridge to 24 hours to allow the flavours to develop.
(I have very successfully made it just a couple of hours before dinner).

It’s also v good on cereal for breakfast and can be made well in advance.
