Freezing ahead for Christmas- what can you not freeze?

Question for those who freeze ahead- what doesn’t work well? I’m imagining that milk and egg based sauces might split?

I freeze milk, white sauce and cheese sauce all the time, they don't split, sometimes need a drop of extra milk in and a good stir when heating but fine👍
Have in the past prepared the gravy and frozen it. Yesterday I prepared the raw pigs in blankets and froze, have already made up the stuffing I do (cooked bacon bits, shallots, mushrooms cooled then mixed well with raw sausagemeat) it's in the correct dish ready to put straight in the oven. I know people who prepare mince pies so they just have to pop in the oven but afraid everytime I make those one of my sons inhales them 4 at a time so no raw ones have managed to make it to the freezer😂
