Salmon en croute side ideas

Looking for ideas...This year we're having Salmon en croute; I'm not a massive meat eater and was wondering if the usual roasties, etc, would overwhelm the dish, or if I can just serve that as usual. I want it to be vaguely Christ-massy. Any suggestions welcome :)

I'd go for potatoes dauphinois. Easy to make, and then just bung in the oven. If I have roasties I'd want gravy which really wouldn't go with salmon.

I did Delias salmon coulibiac a few years ago and just did new potatoes and salad with it.
Admittedly not very Christmassy but it really didn't need anything else.
You could put the Christmas element in with the starter/dessert?

We had salmon coulibac (don't know how it's spelt!) with dauphinoise and asparagus a few years ago. Was yum.

My go-to veg dish for this kind of thing is tenderstem broccoli tossed with a couple of spoonfuls of garlic and ginger (from a jar if lazy), white pepper, and vietnamese chilli dipping sauce. Cuts the potential cloying of pastry and cream in a complementary way. You could do mangetout, chuck in a handful of peas or shredded leeks, green beans etc.

We’re pescatarian and normally have a salmon en croute/salmon alongside a meat alternative and normal Christmas dinner veg! 😊

I sometimes do the Delia roast peppers alongside. Just halved red peppers with a couple of tomato 1/4s and slivers of garlic in them. The original recipe has anchovies as well but I don't always bother. They are quite light and refreshing and juicy which I find works really well with the heavy pastry. also really easy to prepare in advance and then just chuck in the oven.
