What veg must be had for Christmas dinner?

I know everyone has their own tastes - but looking for extra inspiration (not bothered re potatoes)...

Usually I would do some or all of the following-

brussel sprouts with pecan nuts/dash of maple syrup
carrots
red cabbage done with red wine/cranberry stuff/cinnamon
roast parsnips
cauliflower cheese

I’m one of those who do a lot of different vegetable dishes, but I don’t find it stressful at all. I’ve got it down to a fine art and I’m very quick at cooking.

Definitely roast potatoes- 2 types, goose fat and vegetarian.
Sprouts with bacon and chestnuts. Love the sound of adding maple syrup. But might be a bit much with the below.
Honey roast parsnips and carrots.
We don't have cauliflower cheese for Christmas dinner as I find it too filling. But we do have it in the days after, with pigs in blankets mixed in!

It's not stressful. We do most of it beforehand, very relaxed, and on the day there's a plan for what order to cook or reheat the various side dishes. We're all big veg eaters so it's nice to have plenty.

It helps to have two or three dishes that can be microwaved, two or three that can be done/finished on the hob, and two or three that can be roasted. That way it all comes together pretty easily.

I'm looking forward to it. And I'm looking forward to doing a Christmas 2.0 (but on a much smaller scale) a few days later!

We have a tradition that everyone who is coming to Christmas dinner gets to choose a veg dish.

This year it's

Cauliflower cheese
Braised red cabbage
Mashed swede
Carrot and parsnip mash
Creamed celeriac
Tenderstem broccoli
Sprouts
Maple syrup carrots
Roast parsnips
Roast and mashed potatoes
Peas

I think last year I did:

  • roast potatoes
  • mashed potatoes
  • roast sweet potatoes, carrots and onions
  • honey roasted parsnips
  • cauliflower cheese
  • red cabbage
  • kale and leeks in garlic butter
  • sprouts with bacon
  • carrot and swede mash
  • tenderstem broccoli
  • petits pois
  • mushy peas
Not all things I would pick personally and I may have gone slightly OTT but I wanted to make sure everyone's favourites were included.

Depends on how many people, but usually:
Sprouts (with chestnuts and lardons)
Carrots
Parsnips
Swede mash
Cauli cheese
Red cabbage
Plus roasties

We have broccoli, cauliflower and cauliflower cheese, peas, sweetcorn, carrots and swede (ds16 favourite and the only one he will properly eat) roast parsnips. Also sprouts with bacon… kids just take the bacon usually 😂

Heh there's only five of us and no children who might really miss their favourite things, so it's pretty relaxed. Another year I'd have made some but I just can't be bothered this year!

purple sprouting broccoli
peas
savoy cabbage (bloody love cabbage on all roast dinners)
honey roasted parsnips & carrots
roast potatoes in goose fat.

Totally agree on the cabbage but it has to be sweetheart cabbage, we have it with every roast dinner but we forgo it for sprouts on Christmas Day
