What veg must be had for Christmas dinner?

I know everyone has their own tastes - but looking for extra inspiration (not bothered re potatoes)...

Usually I would do some or all of the following-

brussel sprouts with pecan nuts/dash of maple syrup
carrots
red cabbage done with red wine/cranberry stuff/cinnamon
roast parsnips
cauliflower cheese

This year:

Mixed roasted veg (carrots, parsnips, sweet potatoes, beetroot- a new addition last year)
Red cabbage casserole
Brussels (steamed)
Cauliflower cheese
Green beans
Roast potatoes of course

Or and swede, mashed, love swede and low calorie if you watch the butter you put in, ideal to bulk up you mr plate

Roast potatoes

But three meats - a turkey, a ham, a spiced beef.

Carrot and swede mash with lots of butter and pepper (my dad has always made it for Christmas dinner, I love it so carried on the tradition)
honey roasted parsnips and carrots
cauliflower and broccoli cheese
sprouts fried off in some butter, garlic and bacon bits
red cabbage cooked with oranges (think it was a Nigella recipe)
roast potatoes
peas

We switch up our centrepiece bird/joint every year, so it depends on that to some extent.

This year I was going to do duck but plans have changed. ILs have requested chicken so we'll do that and a joint of beef as well. Sides will be: roast potatoes (obviously!); pigs in blankets; roasted parsnips and carrots with garlic, thyme and lemon; Brussels sprouts with cranberries, chestnuts and pancetta; roasted beetroot and red onion with a balsamic glaze; braised red cabbage; cauliflower cheese, because for some reason DH has to have this with roast beef.

Absolutely love cauliflower cheese but would never have it with a Christmas dinner - just too much richness

Why are you all messing about with the sprouts? Just streamed is enough.. my favourite veg.. got to be tiny button sprouts.
We always have leeks too.

I have steamed and buttered sprouts all year round; I really like them too. Lots of people prefer them to be dressed up a bit and I'm okay with that. Quite like something different from the ordinary for a feast meal.

Broccoli and carrots. I do like veg but I'm not a fan of having to do about 5 because someone does not like it.

Two of the 3 children were veg adverse. One preferred hers raw, the other has a thing about textures and some tastes and carrots and broccoli were two they'd eat without fuss.

One of the two now eats a much wider range of veg but the other is still fussy.

The Leeks sound lovely 😍. Do you have a recipe or idiot proof steps to making this please??

Wash and slice the leeks as you would for soup, don't dry the leeks you will need a little cooking water. You can do this prep the day before. Depending on size, one or two leeks will be a serving for two to four people.
Tip the leeks into a microwaveable bowl, dot with a few knobs of salted butter. Partially cover, microwave on high for two minutes, check the leeks are soft, they may need another minute, depending on amount, age of leeks etc.
Stir a good teaspoonful of wholegrain mustard through the cooked leeks, you can add some black pepper as a finishing spice too.
If you've used something like a Pyrex bowl, that can be the serving dish, so it's a very quick and easy vegetable to produce on a busy day.

nb "Braided carrots & celery" should read Braised carrots & celery! 🥕 🥕 🥕 🥕

Roast potatoes , roast parsnips, sprouts with chestnuts, glazed carrots and maybe some kale or broccoli.

I think the spiced red cabbage takes over the dinner so we don’t have it. Cauliflower cheese is a bit much with everything else including bread sauce, so I save that for leftover cold meat and baked potatoes.

Everyone will have their own traditions but in north east Scotland (where both my grannies are from) Christmas dinner is a bit simpler than much of what I read on here and see on the telly.

Roast chicken
Roast potatoes
Mashed potatoes
Brussels sprouts
Carrots
Peas
Skirlie (oatmeal stuffing)
Gravy (quite thin, lots of it)

My parents added in corn on the cob because as kids we liked it. Nothing but a dab of butter on the veg and latterly black pepper. It's actually olive oil now as my brother is a vegan 😂

We've never had sauces etc. I grew up thinking cauliflower cheese was a main course, not an accompaniment.

Then my granny's trifle! Brother does without.

Thanks for all the ideas here! Come to think of it I love mashed swede but have never tried making it. Leeks are a great idea too

How does everyone do mashed swede? Whenever I’ve done it, it’s lumpy, despite using a potato ricer. I don’t know where I go wrong.
