What veg must be had for Christmas dinner?

I know everyone has their own tastes - but looking for extra inspiration (not bothered re potatoes)...

Usually I would do some or all of the following-

brussel sprouts with pecan nuts/dash of maple syrup
carrots
red cabbage done with red wine/cranberry stuff/cinnamon
roast parsnips
cauliflower cheese

Sprouts - steamed, not messed about with.

Sprouts - some whole and steamed, loads chopped and fried in butter and garlic. Food of the Christmas gods.

I was going to say compulsory veg is carrots, brussels, broccoli, roasted onions and parsnips. Optionals are cauliflower and red cabbage. It's not worth doing the latter if there's not that many of you though (it may well be just three of us for Christmas and one of us doesn't eat veg!). Well usually shove it all but the brussels in the same dish in the oven and toast if it's just two of us.

I was going to say brussels in bacon but brussel sprouts with pecan nuts/dash of maple syrup sounds epic, so I might steal it.

I'm all for less faff Christmas dinner

Roast potatoes and parsnips
Cauliflower cheese
Carrots
Broccoli (tenderstem) as the grandkids eat it until its coming out their ears
Swede and sweet potato mash
Peas - only veg that my son in law will eat Hmm

Roast potatoes
Parmesan roast parsnips (Delia Smith recipe)
Brussels sprouts, boiled or steamed till just tender and still nutty, and served plain - why add butter, bacon etc when there's already a rich sauce (my gravy is pretty rich)
Chantenay carrots cooked in the oven in foil with a little orange juice, tarragon and butter
Petits pois, frozen, cooked until just defrosted and also served plain (this goes back to the days when neither child would eat sprouts but did like peas - so provided the only green on their plates - wouldn't be the case in recent years but it's traditional now)
Mashed swede if I get round to it - easy to make ahead, needs a good deal of butter and black pepper

I don't really like the sweet red cabbage recipes so don't bother with that. Cauliflower cheese is gorgeous but rich and we've got enough going on already. So we've never had that either.

Also serve cranberry relish (home-made, another Delia recipe) and bread sauce.(ditto) which contains onion, so you could say there's a bit more vegetable matter in there.

My OH does this Brussel sprout/butter/bacon mashed up thing and it is delicious and we only ever have it at Christmas - so that's a must

Obligatory for us would be roast potatoes, carrots , sprouts and parsnips.
Oven and hob space becomes an issue after this but I think braised red cabbage makes a good addition.

Sprouts roasted in the oven with pancetta and chestnuts (love the sound of the sprouts with pecans, but dh is allergic to pecans)

I could see that spiced red cabbage would go well with something like goose or duck, but for me it doesn't go with turkey, which is what we will be having. Maybe I just haven't had a really good version, though, given that I do like cranberry sauce with turkey and the flavourings are not that different.

I don't do it but a 'full roast' to me would be:

Sprouts.

Roast potatoes and either mashed potatoes or potato and parsnip mashed together with garlic and a pinch of ginger, or turnip mashed with crispy bacon and cream.

Cabbage of some sort, possible roasted red cabbage.

Mashed carrot and swede.

Steamed broccoli, cauliflower, carrot batons

We generally have roast carrots, potatoes and pumpkin plus broccoli/cauliflower cheese.

Might jazz it up this year and do a cauliflower/ parsnip puree.

Carrots and green beans. Obv roast potatoes. Sprouts, but noone likes them so I buy them loose, one per person and just cook those so everyone has one only. Elaborate, but family tradition now.

The Leeks sound lovely 😍. Do you have a recipe or idiot proof steps to making this please??
