Christmas Lunch preparation

I'm looking for help! We're having a big family Christmas lunch this year with my DD, SIL, DGC and both sets of Grandparents. We've decided amongst us all to bring prepared food to cook on the day. We plan to all spend Christmas morning at our respective homes then nip over to DD/SIL's house (2 miles away) with the food ready to pop in the oven. I've been allocated veg prep so have been thinking of the best way to prepare potatoes for roasting and mashing. What would be the best foolproof way to do this? Pre roast then warm through? Pre boil ready for roasting? If the later, do you coat the potatoes with oil/goose fat once cooled? How far in advance can I prepare them? Any advice would be welcome. TIA

Hopefully this helps. I do this every year and they turn out perfectly realfood.tesco.com/recipes/crunchy-freeze-ahead-roast-potatoes.html

Check out Sam Nixon on Instagram. He has a whole section on 'get ahead for Christmas ' with some really positive comments from people that have used his tips previously.
He makes it look easy and fun too!
