Vegetarian Christmas Eve meal ideas?

Hi all,
Trying to get on the front foot for Christmas food planning. Does anyone have any ideas about what to eat on Christmas Eve for a vegetarian dinner? Maybe something “cut and come again” that we could finish off over the rest of the week?

Previously we’ve had beige buffets (all of the shove in the oven party nibbles) but I would like something with a bit more veg in it, or some amazing sourdough pizzas from a local place, but these have to be booked for a certain time slot and it’s nicer to be flexible.

Lidl do some nice cheesy fondue type things. Something like that with veg and bread.

We do Coquilles St Jacques and fishy platters if your vegetarians eat fish.

I have made an Amazing Veggie Pie in previous Christmases which usually lasts for a few meals.

I use ready-made constituent ingredients to make it easier but you can make from scratch.

Line your biggest cake tin (or buy a really big one) with ready-made pasty and partially bake it (with baking beads) so it doesn't go soggy.

Fill up with various layers of:
Nut roast (no more than a cm to a layer - usually bought from M&S or Waitrose)
Large portobello mushrooms (cooked in butter before they go in, not raw)
Roasted slices of various favourite vegetables (butternut squash/aubergines/bell peppers for us, but you could choose different)
Cheese
Aim for 7 or 8 layers in whatever combinations you like.

Top with a final layer of pastry and bake.

I tend to make it large enough that one meal uses up between a quarter and a third of the pie depending how many vegetarians there are. It's fine cold on boxing day and beyond.

If you want pizza, the Waitrose No 1 sourdough pizzas are excellent, the wood-fired mushroom and truffle, chargrilled vegetable and pesto or double mozzarella margerita are vegetarian

I agree with @BrokenSushiLook , it's such a treat, but I do think if it as "left overs pie" and I add cranberry sauce.

My go to vege dinner in a lasagne dish is

Chunks of pumpkin, parboiled, cooled and sliced.
Italian tomato sauce.

Layer the pumpkin slices with the sauce, lasagne style. Dot with Greek feta or bacon bits for a salt hit. Make the last layer sauce. Cover with cheese and breadcrumbs. Bake at 180 degrees until golden brown and bubbling.

Keeps well in the fridge, very filling and very forgiving.

Not 'cut and come' as such but the recipe for mushroom stew with dumplings from the Tesco website is absolutely delicious.

DH takes leftovers to work to heat through for lunch and it also makes a great toasties, if you chop it down a bit and add cheese.

PPs - seafood and bacon are NOT vegetarian!

if you’re not veggie yourself and therefore may not know this - if you do Camembert or use other cheese make sure it’s vegetarian ie no animal rennet

This is awesome, I’ve pretty got Christmas week sorted! Bought in pizza a good idea but that baklava looks a complete winner. Am going to give it a trial run in the next couple of weeks.

I know bacon is not vegetarian but it can be used on another occasion.

Leave out both the bacon and the fets to make mine vegan.

My DH is vegetarian and he always makes a lentil loaf. Then he has some on Xmas day too with all the Xmas vegetables and vegetarian gravy. I think he uses the Sarah Brown recipe.
