chopped fresh veg - how to keep overnight?

I've chopped and peeled all the fresh veg for tomorrow. For those of you who've done this before, do you do a salt or lemon bath or just water? And does this work for you with all veg? I've put it in a bowl of saltwater on the counter. Will this be ok over night? Do I need to run out and get a lemon? Do I have to put the bowl in the garage to keep it cool?

Just cold water and keep cool is fine

I put mine in bags in the veg drawer in the fridge. I only put peeled spuds in a pan of water.

Thanks both, it would be so much easier to keep them in the bowl of water on the counter top, so if that's worked for you @Dartmoorcheffy I'm happy to go with that.

I always kept potatoes in a pan of water and all the other prepped veggies in food bags in the fridge.

I miss the days of peeling potatoes for 14!
