I’ve never made bread sauce before and he says in the recipe to use ready-to-bake ciabatta, couldn’t find any so I got ready-to-bake sourdough instead, my question is - nowhere in the recipe does it say if you actually bake the loaves or just use them as is?? Can anyone enlighten me 😅

I just use ordinary white bread.

Just use ordinary breadcrumbs and save yourself the trouble.

Breadcrumbs always. I keep the ends of the loaves in the freezer and whizz them to crumbs when there is enough.

I've never made it, but judging by the recipe I'm guessing you bake it first & let it cool.
No.4 says to make breadcrumbs, and I'd think unbaked it wouldn't make crumbs but rather be dough like.

I just use whatever bread I happen to have. Delia also says to cut the crusts off but I became too lazy for that as well.

Bread sauce is fab whether you make it with sliced white, granary or homemade sourdough.

Use any bread you have spare to make breadcrumbs. Bread sauce was a traditional and delicious way of using up stale bread (like panzanella in Italy). White bread is best really. But if you want to follow the JO recipe, definitely cook the sourdough ready to bake first otherwise it will just be dough.

I've made bread sauce every year since the late 1990s and always just used ordinary white bread.

ETA - I use Delia Smith's method.

Awesome thanks for the advice guys! I don’t have any normal white bread in so I’ll just bake the sourdough and use them 👍🏻👍🏻👍🏻 I’m sure it would taste good with any type of white bread really like you all say, will be experimental with the sourdough anyway 😂🙈
