Early prep - what-and how early

I've got everything we need. Cooking for 10, 8 adults 2 dcs.

Ill be taking beef out freezer today to defrost, as will take 48hrs its huge!
Ill cook that xmas eve. Slice and put in slow cooker in gravy xmas day.

Stuffing is paxo as only 7 eat stuffing and 5 of those only eat paxo. Can i ball it now and freeze or maybe ball and fridge xmas eve.

Spuds I'll peel day before.

Can i par boil the sprouts and freeze, as find the peeling takes ages so if i could do today rather than xmas eve would be ideal as todays a free day.
Likewise any other veg
. We're out all xmas eve so ideally don't want loads to do then but will if i need to.

Pigs in blankets are pre made as are Yorkshires. Other guest doing turkey.

You can peel and parboil the potatoes and freeze them as long as you coat them with fat before freezing. And whack another 25 mins onto the cooking time from frozen. They work perfectly - mine are already in the freezer.

Also parsnips if you’re having them freeze very well (defrost pre cooking). I’ve also made braised red cabbage which I’ll defrost and warm. Roasted carrots will last a couple of days par cooked in the fridge.
