What are you eating between Christmas and NY?

I need help with my meal plan before going shopping today!

Christmas Eve and Christmas Day are sorted. I'd like some reasonably quick, easy, cheap(!) meals to eat in the week leading up to NY, but I have zero inspiration.

Boxing Day - we always do some mashed spuds, mix with tomatoes and leftover chicken, form into patties, coat in egg and then breadcrumbs and fry. Served with baked beans, posh coleslaw and any leftover sausage and stuffing.

It's as much part of the tradition as the Xmas Day meal, it's basic but the whole thing tastes really really good. Do the mash fresh though, not leftover.

If still enough turkey, chicken etc left the day after, fry with chillies, garlic and red peppers for about five mins, smother with tomato puree and fry for a couple more minutes, add a couple of tablespoons of water to soften, wrap up with salad in a tortilla. Another basic one that tastes good!

We have a freezer clear out between Christmas and new year it makes for some interesting combinations and the kids think it’s funny.

Boxing Day was leftovers at my parents, chocolate, mini sausages/sausage rolls and crisps.
Today and tomorrow very easy dinners as it's just me and the 1 year old: chicken nuggets, chips and beans today. Tomorrow scrambled egg/beans and mushrooms on toast.
Friday- not sure yet but another easy one
Sat- takeaway probably pizza maybe Chinese
Sun/mon- just a normal dinner we don't do anything special for new year
