What to cook for parents boxing day?

Bit last minute, I know 🙄

My parents are coming boxing day eve for food and to stay over. Really looking forward to having them!
However, I can't think what to cook.

There will be 4 adults and our 10 year old son. No allergies, everyone eats everything so no fussy eaters, son included.

I want to do something nice, relatively straightforward but not roast as we will have that Christmas day. We are at SiLs Christmas day so no leftovers.

Has anyone got any ideas? My brain appears to be fudge!

Casserole, shepherds pie, pasta? The main request in our family would be to avoid Christmas pud as only one of us is that keen on it.

I have my in laws coming boxing day. Im doing toad in the hole, roast veg and mash. Cheesecake pudding.

We normally do a curry or something spicy or maybe something like a tagine and couscous after Christmas. I'm sick of the traditional roast type things by then!

Sounds good if you have a double oven. I don’t know what I did without one for 20 years

Seconding the curry or tagine suggestion. Easy to do in advance and welcome after Christmas food.

Or something fairly fresh like a side of salmon with new potatoes and salads.

Ham, fried eggs and bubble & squeak. That's what we are having.

Followed by Lemoncello ice cream.

Nigellas cherry cola gammon and potato gratin. You will have left overs for a couple of days and it is super delicious - better than Christmas Day roast
