A book that you love and want to share with him, make him a foodie gift if you are a good cook eg cake, truffles, biscuits, gingerbread, tickets for fave band, OS map for somewhere you're planning to explore together? Can you think back to any conversations/places where he’s mentioned liking anything special? I have friends who are so good at getting the exact right thing but it’s hard with a new person.
