Parboiling potatoes in advance?

I must be searching wrong and apologies for boring question but I can never find the answer online. Can you parboil potatoes, drain, fluff and refrigerate ahead of time and then roast later? Or will it make them taste strange or go yucky in the fridge?

Yes, and they are good for a rest in the fridge. Or even better, freeze them. You can put them straight into the hot oil from the freezer

I haven't done this but am sure they would be ok if kept in an airtight container.

I have prepared in advance and cooked from frozen for the past few years and that has worked well www.bbcgoodfood.com/recipes/freeze-ahead-roasties
