There is a tradition with my lovely NCT friends that we meet every Christmas Eve at about 5pm til 7pm for a drink. We've done it for 20 plus years as it usually *works around kids and visitors.

This year I will have my Christmas guests from the 23rd. Is there something I could cook and leave ready to eat at 7:30?? I'll be going out at 4:30.

Any suggestions other than quiche and salad....which is a great option but might be needed for Boxing Day or the 23rd.

Beef casserole in the oven on low? With new or diced pots and veg in it, it’s a whole meal. Stick it in the oven as you leave, maybe thicken the gravy right before you serve if needed. We cook ours for 3 + hours on low when we make it so it’s nice & tender.

Failing that, get some sort of pop in the oven thing like a coq au vin (or make up a lasagne or something) and have the guest put it in the oven at 7 so it’s ready to serve when you get in.

Agree on casserole - beef, lamb, pork will all sit for a long time in a low oven / slow cooker

If it doesn't need to be as substantial as a stew - soup, bread, cheese, fruit.

Or lasagne or moussaka made in advance and re-heated when you get back. Salad, fruit.

Spag bol in slow cooker, put the mince in raw with the sauce on high for 4 hours and it will be perfect. Cook pasta when you're home x
