Dairy free, gluten free, lemon free pudding?

I’ve been delegated to dessert for the big day. Does anyone have any ideas of what I can make that’s dairy and gluten free with no lemon to accommodate various allergies?

I’m not against making more than one thing but 2 people are both DF and GF. Then lemon allergy can have dairy and gluten.

bonus points if it could be prepped / made a day or two before!

Baked Alaska makes a great Christmas dessert.
use dairy free spread and dairy free gluten free ice cream.

it can be made before and kept in the freezer until needed. Then just 10 minutes in the oven

If something relies heavily on cream then fake cream never quite hits the spot. It’s fine as an ingredient but not so much as the main thing.

Brownies and Rocky road both work well gluten and dairy free. You could serve the brownies with ice cream?

Then you could have dairy free and normal versions.

Check out Becky Excell. All her recipes are gf and she provides df and or lactose free alternative ingredients. There's loads on her blog and Instagram and she also has a Christmas cook book out atm

I second Nigella's chocolate olive oil cake!

I have been disappointed by GF recipes that just replace the flour with generic GF flour. Different GF flours will have different ingredients that react in different ways. I prefer recipes that state how much of each flour to use. For example we have adapted a biscuit recipe over the years to include equal quantities of almond flour, GF oat flour and tapioca starch. We make ginger nuts, cinnamon biscuits and lemon biscuits based on the same recipe. The Gluten Free Goddess website is good for recipes with specific flours.

Poached pears ticks all the boxes and is really Christmassy. Poach them in red wine with mulled wine spices and serve with a glass of hot poaching liquid on the side. Then bought ice cream or vegan ice cream on the side.

I made a pavlova using aquafaba and oatly double cream topped with winter berries. I didn’t tell the staunch meat eaters it had no dairy until afree and everyone loved it. It looked really impressive too.

Yule logs are just a fatless chocolate sponge with no flour, just cocoa powder. Hence as a recipe it is naturally GF and DF. It’s no good if your dairy free person also cannot eat eggs - the one I cook for in our family can eat eggs without a problem.

Just use a dairy free spread (any of the Pure ones have worked well for me in the past) to make the icing and job’s a good ‘un!
